Mint Brownies

Made a yummy treat for Book Club tonight and thought I'd share with you:

Mint Brownies!

2/3 cup butter
3 squares unsweetened baking chocolate
2 cups brown sugar
3 eggs
1 tsp. vanilla
1 1/4 cup flour
1 tsp. baking powder
1/4 tsp. salt

Melt butter and chocolate in microwave. Remove from heat and stir in wet ingredients. Mix together dry ingredients and add to mixture. Bake 350 for 25-30 min. in greased 13X9 pan. Cool completely.








Mint Frosting:




2 cups powdered sugar


1/4 cup butter


2 Tbsp milk


1/2 tsp. peppermine extract


green food coloring




Cream together until smooth. Spread evenly over cooled brownies.


Glaze:




2 squares unsweetened baking chocolate


2 tbsp. butter




Melt in microwave. Drizzle over brownies.

Gotta make it fun and pretty!




Add mini chocolate chips- and wallah! Best with vanilla ice cream. Enjoy!!!



The kids were happy to have the leftovers. I don't bake much anymore now that I'm not addicted to this stuff- but I still do this once in a while! No complaints around here. :)
